The green ring above the fireplace is filling very very fast, and the satisfaction is 100, but the peasants are spawning VERY slowly. Any ideas?

If i'm not mistaken a house should provide shelter for 6-8 peasants. Archers and other military units don't count as population. Have you tried saving your map and restarting your game with Admin rights?
